Illinois Tech Study Finds Daily Beans Lower Cholesterol, Inflammation in Prediabetes
A recent 12-week study conducted by the Illinois Institute of Technology and funded by the USDA found that consuming one cup of chickpeas daily significantly lowers cholesterol levels in adults with prediabetes, reducing total cholesterol by about 15 points to healthy levels. The study also showed that black beans reduce inflammation markers by 27%, with both beans improving blood markers related to heart health and diabetes. Chickpeas' cholesterol-lowering effects are attributed to their soluble fiber, which nourishes the gut microbiome and helps flush cholesterol out naturally, presenting a drug-free alternative to statins. Researchers emphasized the affordability and accessibility of chickpeas and black beans, highlighting their potential as an easy and cost-effective dietary intervention for the 98 million Americans at risk of chronic disease. While the results are promising, the study's limited size and duration mean further research is needed to confirm long-term benefits. Nutritionists recommend cooking methods like roasting or stewing to maximize health benefits without adding excess oil.
