Chi-Chi's Reopens in St. Louis Park Oct. 6
Chi-Chi's is relaunching with its first new restaurant scheduled to open Monday, Oct. 6, 2025, at 1602 West End Blvd in St. Louis Park, Minnesota, which will serve as the flagship for the revived chain. The relaunch is led by Michael McDermott, son of co‑founder Marno McDermott, and features a refreshed design, modern decor, a revamped menu combining original favorites like chimichangas with new items such as Quesabirria tacos with consommé, a Manchego burger, El Burro Con Queso, seafood enchiladas and Nachos Grande, plus an improved bar. Chi-Chi's was founded in 1975 and at its peak operated roughly 200 U.S. locations. The brand filed for bankruptcy after a 2003 hepatitis A outbreak tied to green onions that sickened about 650 people and killed four, and its last U.S. restaurant closed in 2004. The relaunch has backing that includes a December 2024 agreement to use the Chi-Chi's name and an equity crowdfunding campaign that raised over $2.3 million from more than 2,000 investors, and company leaders say more locations are planned.
